Ingredients

  • 2 stems lemon grass
  • 150g caster sugar
  • 1 large fresh pineapple, chopped
  • 2 mangoes, chopped
  • 1 pawpaw, chopped
  • 2 kiwi fruit, peeled and sliced
  • 3 passion fruit
  • 2 limes
  • 200ml water

Method

  1. To prepare the lemon grass syrup, remove the tough outer layers of the lemon grass and hit it with a rolling pin to break the stems open and release the flavour. Then add to a pan with the sugar and 200ml water.

  2. Stir over a low heat to dissolve the sugar. When it begins to boil, take the pan off the heat and leave the lemon grass to infuse until the syrup is cold.

  3. Gently mix the chopped fruit into the syrup. Then add the flesh and seeds of the passion fruit and the juice of two limes.
