Ingredients

  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • 1 beef sausage
  • 1 medium potato, peeled and cubed
  • 1 tsp dried basil (optional)
  • 200g passata (sieved tomatoes) or tinned tomatoes
  • 1 tin of butter beans or cannellini beans, drained
  • 1 clove garlic, peeled and chopped

Method

  1. Place the sausage under the grill and cook for 8-10 minutes, until they’re thoroughly cooked.

  2. While the sausages are cooking, gently fry the onion and garlic in a saucepan with the oil. Add the passata, butter beans, potato and sliced sausage, and heat gently.

  3. Simmer for 8-10 minutes until the potato is soft. Stir in the basil and heat for another minute.
