Ingredients
switch to imperial- 1 small onion, finely chopped
- 1 tbsp olive oil
- 1 beef sausage
- 1 medium potato, peeled and cubed
- 1 tsp dried basil (optional)
- 200g passata (sieved tomatoes) or tinned tomatoes
- 1 tin of butter beans or cannellini beans, drained
- 1 clove garlic, peeled and chopped
Method
Place the sausage under the grill and cook for 8-10 minutes, until they’re thoroughly cooked.
While the sausages are cooking, gently fry the onion and garlic in a saucepan with the oil. Add the passata, butter beans, potato and sliced sausage, and heat gently.
Simmer for 8-10 minutes until the potato is soft. Stir in the basil and heat for another minute.
