A galette is traditionally a round, flat cake with a pastry or pancake base, this sweet recipe is garnished with red apples

Ingredients

  • 500g ready-made puff pastry
  • 100g ground almonds
  • 3 tbsp apple juice
  • 2 red-skinned dessert apples, sliced
  • 2 tbsp clear honey
  • 3 heaped tbsp apricot jam
  • 15g mixed chopped nuts
  • 25g plain flour for rolling out the pastry

Method

  1. Preheat the oven to 200°C or gas mark 6.

  2. Roll out the pastry on a lightly floured table and cut it into 9cm squares.

  3. Mix the ground almonds with apple juice and spread over the pastry leaving a 1cm border around the edge. Then arrange the slices of apple over the almond mixture and brush with warm honey.

  4. Bake for 15-20 minutes, on a lightly greased baking tray, until the pastry is golden brown.

  5. Finally, brush a little warm apricot jam over the apples and sprinkle with chopped nuts. These are delicious served hot or cold with a spoonful of crème fraiche or ice cream.
